Cupping is a standardized tasting protocol used to evaluate coffee quality by steeping coarsely ground coffee in hot water (around 200°F/93°C) for 3-5 minutes, then slurping the liquid from a spoon to aerate it across the palate. The method uses simple equipment—bowls, hot water, and a cupping spoon—and is designed to highlight the coffee's flavor notes, acidity, body, and balance in a controlled, repeatable manner. Cupping is the industry standard for quality assessment and allows tasters to compare multiple coffees side-by-side.
