buttery caramel
Buttery caramel is a hallmark sweetness note in specialty coffee, presenting as a smooth, rich, and lingering sweetness with a creamy, slightly fatty mouthfeel reminiscent of caramelized sugar and melted butter. It is most commonly found in coffees from Brazil and Colombia, particularly in natural or pulped natural (honey) processed beans where extended contact with the fruit's sugars during drying amplifies sweetness and body. Medium roast profiles tend to highlight this note best, as they develop Maillard reaction compounds without pushing into bitter or smoky territory.
