coconut
Coconut in specialty coffee presents as a smooth, creamy sweetness with a subtle tropical nuttiness, often accompanied by a silky mouthfeel reminiscent of coconut milk or toasted coconut flakes. It is most commonly found in naturally processed or honey processed coffees from origins such as Ethiopia, Brazil, and parts of Southeast Asia, where extended contact with the fruit's mucilage during drying allows sugars and lipid-like compounds to develop. This note can also emerge in washed coffees with high fat content or in beans roasted to a light-to-medium profile that preserves delicate aromatic esters.
