Star fruit in specialty coffee presents as a bright, tangy-sweet tropical acidity with a crisp, juicy quality reminiscent of a cross between citrus and mild green apple. It is most commonly found in naturally processed or washed East African coffees — particularly from Ethiopia and Kenya — as well as some Central American and Colombian high-altitude lots, where the combination of varietal genetics and terroir produces its signature luminous, exotic fruitiness. On the palate it tends to be delicate yet vibrant, often accompanied by floral or other tropical fruit notes that amplify its refreshing, almost effervescent character.
