Chilled red wine in specialty coffee presents as a complex, vinous tasting note characterized by bright red and dark fruit (think Burgundy-style cherry, plum, and blackcurrant), a refreshing tartness, and a silky, wine-like mouthfeel. This note is most commonly found in naturally processed or anaerobic fermentation coffees from Ethiopia (particularly Yirgacheffe and Sidama) and some experimental lots from Colombia or Kenya, where extended fermentation develops pronounced grape and berry esters. The "chilled" quality adds a lifted, clean acidity and a cooling finish that distinguishes it from a heavier, jammy red wine note.
