Dried strawberry in specialty coffee presents as a concentrated, jammy sweetness with a slightly tangy, almost candy-like quality that is more intense and less fresh than its raw counterpart. This flavor note is commonly found in naturally processed Ethiopian coffees — particularly from regions like Yirgacheffe and Sidama — where the drying of the whole coffee cherry on raised beds allows fruit sugars to deeply permeate the bean. It can also emerge in anaerobic and extended fermentation processed lots, where controlled microbial activity amplifies red fruit esters and acidity into a rich, syrupy dried-fruit character.
