cider
Cider in specialty coffee presents as a bright, tangy, and effervescent apple-like acidity, often with a slightly fermented sweetness reminiscent of fresh-pressed or sparkling apple cider. This flavor note is commonly found in naturally processed or anaerobically fermented coffees from Ethiopia, Kenya, and Colombia, where fruit-forward complexity is amplified during processing. It is a hallmark of high-elevation washed Ethiopians as well, where clean, juicy acidity mimics the crisp tartness of cider apples.
