San Agustín is a renowned coffee-growing municipality in Colombia's southern Huila department, situated in the Andes near the headwaters of the Magdalena River, with farms cultivating 100% Arabica varieties such as Castillo and Caturra at altitudes of 1,500–1,900 metres above sea level. The region benefits from a subtropical highland climate with a stable mean temperature of around 18°C, frequent rainfall, and natural shade from banana and tropical trees, creating ideal conditions for slow cherry maturation. Coffees from San Agustín are typically fully washed and sun-dried, yielding a smooth, balanced cup with bright citrus acidity and characteristic notes of orange, caramel, and milk chocolate.
