This flavor is most commonly found in washed or lightly honey-processed coffees from East Africa (particularly Ethiopia and Kenya) and Central America, where high-altitude growing conditions and varietal genetics produce vibrant, nuanced citrus acidity. The "zest" quality specifically evokes the aromatic oils of the peel — bright, effervescent, and slightly resinous — rather than the juice, giving the cup a lifted, lingering finish.")
