Be sure to start with third wave water or fresh filtered water, just off boil.

| Ratio | 20g coffee / 320g water |
| Grind | 13 on Baratza Encore |

Set your paper filter inside dripper

Pour a generous amount of water through filter, then dump water from carafe

Grind 20g of coffee on medium setting, add to filter, give it a shake

Pour 40g of water while starting timer

0:40 Let sit for 40 seconds

Pour water in slow circles around center of coffee bed

1:05 Keep our steady, but try to hit 320g of water at 1:45

0:45 Allow coffee to draw down through the filter, then serve
