Variety Coffee Roasters is a Brooklyn specialty coffee company founded in 2008 in Williamsburg by Gavin Compton, named after the original Cho's Variety store sign on Graham Avenue. Now with nine NYC locations and a stand-alone East Williamsburg roastery (opened 2019), Variety roasts daily in Brooklyn.
